Not till I have had my coffeeNot till I have had my coffeeMany people across the globe, myself included, wake up each morning and head to the kitchen to grab their first cup of freshly brewed coffee before they face the stresses and strains of the day ahead.  Many of these same people are known by their loved ones as absolute grumps who must be avoided at all costs until they have successfully finished that first cup of coffee.

But over the past twenty years, coffee has become more than just a quick pick me up.  It has found it's way into our daily ritual, established itself in book stores and shopping malls, and transformed itself from a simple hot drink to a complex status symbol that makes a statement about who we are.  Double espresso with sweetener for the career focused thirty something; non-fat, dairy-free, decaf latte for the health conscious woman desperate to lose weight; coffee made with Fair Trade beans and organic soy milk for the socially aware and a double mocha with whipped cream and chocolate shavings for women with PMS.

Whatever your preference, there is no denying that coffee is no longer just a morning thing! Coffee seems to be taking over in all flavors and forms,  including our cookie trays.

I had used coffee grinds in muffins and chocolate cakes before,  but there are now plenty of cookie recipes popping up all over the place as well.

This decadent recipe for Coffee Bean Cookies has almonds, chocolate-covered coffee beans and English toffee candy in the mix. This has to be one of the most heavenly combinations a true coffee (or cookie) lover could ever hope for.

 
The thought of being able to add a little caffeine boost to a sweet treat is absolutely marvelous. Something like this would be great for an afternoon pick-me-up. A word of warning: although you might be inclined to enjoy these cookies with a mug of your favorite coffee,  there is such as thing as overkill, and the flavour of the liquid coffee is likely to drown out the subtle taste of the coffee in the cookies.  Avoid the cookie competing for the sole attention of your discerning palate by enjoying another flavor combo classic and pour yourself a glass of cold milk to dip them into.
