Pomegranate Cookies

Worth the effortWorth the effortOne of the most fascinating fruits of all time has to be the pomegranate. While they may not look like much when you approach them in your favorite supermarket,
they still manage to have an air of intrigue about them. Even though their dull, crimson-like color paired with a somewhat round and bumpy texture make them seem like nothing special, they somehow draw you into their fold and bring out your curious nature.

Once you get a glimpse inside and see all the shiny and deeply colored seeds, you might begin to change your mind and actually see them as a thing of beauty. Of course getting to this stage of the game is a bit of work and not a task for those of you who are a tad on the impatient side! If you are able to muster up a little patience, you are in for a sweet (yet slightly tart) and delicious treat.

To make things easier and get your hands on those delicate seeds more quickly, try removing the outer skin and then place the remainder of the flesh in a bowl of lukewarm water. This will send the white skin floating to the top while the yummy parts sink to the bottom of the bowl.

After you have managed to get your fingers on the bright red seeds and pop them in your mouth, your taste buds will thank your for the time you invested in harvesting them. The extra effort will be well worth it.

Whether this is your first time trying a pomegranate or even if you have been enjoying them for years, you may like to experiment with the anti-oxidant rich seeds in a few recipes. And what better place to start your experimentation than with the cookie jar! There are quite a few tempting cookie recipes that include pomegranate seeds in their list of sumptuous ingredients.

If you are a peanut butter addict, you might like these chewy peanut butter pomegranate cookies made with whole wheat flour. I found this recipe on Whoa Photos blog, of all places. This just goes to show that you never know what you might find when you are not even looking for it.

Let us not forget that peanut butter has long had a well-known sidekick.  I am referring, of course, to jelly. This recipe for pomegranate jelly almond thumbprint cookies calls for pomegranate jelly, rather than actual seeds. The recipe comes from E. Waldo Ward; a company selling gourmet specialty foods. I thought I would throw this in for you impatient types who want the flavor without all of the work.

Finally, the one you chocoholics have been waiting for is this recipe for pomegranate chocolate chunk cookies from Coconut Lime. The sweetness of chocolate combined with the slight tartness of pomegranate result in a complex and dreamy taste sensation.

Pomegranates may involve more work than your typical fruit, but the rewards are worth the few expletives that may escape your lips in the process!
