This coChocolate Pecan Cookie DropsChocolate Pecan Cookie Dropsokie is super delicious and easy to make.  I first made these for a friend’s 30th birthday party and since, this cookie is what everyone talks about.  I even get called (by people who did not know me before the party) “Oh there is Chocolate-Pecan Cookie girl” what a name, huh. 

Here’s the super easy recipe that your friends and family will love!

1 Cup mini semisweet chocolate chips

1 Cup chopped pecans, toasted*

1 Cup sifted powdered sugar

1 egg white

 

Preheat your oven to 350°F. Grease all your cookie sheets (I always use Crisco spray with flour which is great for baking).

In a medium mixing bowl combine together your semisweet chocolate chips, chopped and toasted (this gives them an extra yummy candied taste) pecans, and powdered sugar.  Add in your egg white and make sure to mix well.

If you have a cookie dropper, use that, otherwise a teaspoon will do.  Take the cookie dropper or teaspoon and drop the batter by spoonfuls onto the prepared cookie sheet, making sure to spread each cookie about 2 inches apart.

For a chewier cookie (which is what I make and people seem to love) I put the cookies in for 8 to 9 minutes, I take them out just as they are barely starting to get a little color (but not too much).  If you like your cookies a little crispier leave them in for 11 to 12 minutes or until the edges are a light golden brown.  Remove your yummy cookies to wire racks and let them cool completely (this is very important because the nuts are still very hot and you could really burn your mouth or throat).

*How to Toast Pecans

When you toast the pecans this really brings out their flavor and fragrance and gives them more of a candied taste. 

Pre-heat your oven to 325°F.  Spread your pecans in a single layer on an ungreased cookie sheet.  Put your pecans in the oven and bake for 8 to 10 minutes or until golden brown (make sure to stir your pecans about every 3 minutes to make sure that you pecans are evenly toasted).  Remove your pecans from the oven and let them cool on your baking sheet.  The pecans will darken and become slightly crispier as they cool (be careful because the nuts are hot).

If you would just like to toast a few pecans (or nuts) you can place a handful into a dry skillet over low heat.  You want to stir your pecans constantly for about 2 to 4 minutes or until the pecans darken slightly and become fragrant.
