This is a perfect treat for your child’s last day of school or your summer get together. These cookies are easy to make and taste great!
What you will need:
1 C (2 sticks) butter or margarine, softened
1/2 C granulated sugar
1/2 C firmly packed light brown sugar
1 large egg
2 C all-purpose flour
1/2 C quick-cooking or old-fashioned oats, uncooked
1 tsp almond extract
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
1 3/4 C M&M’s (mini M&M’s work best)
1 C rice crispy cereal
1/2 C shredded coconut
1/2 C coarsely chopped pecans
Preheat your oven to 350°F degrees. In a large bowl, cream together the butter, granulated sugar and brown sugar until light and fluffy, add in the egg and almond extract.
In a medium bowl, combine flour, oats, cream of tartar, baking soda and salt. Slowly and carefully add flour mixture into the butter and sugar mixture. Stir in the M&M’s, rice crispy cereal, coconut and pecans.
Use a cookie dough scoop or tablespoon and drop cookie dough onto the cookie sheet, 2 inches apart onto ungreased cookie sheets.
Bake the cookies for 8-9 minutes (for chewy cookies) or 10-13 minutes (for crunchier cookies) or until they are lightly browned. Remove the cookies from the oven and immediately transfer the cookies to completely cool on wire wracks. You can store the cookies once cooled in a tightly covered container for up to a week and a half. This recipe makes about 4 dozen cookies.

I had made these cookies for a friend’s birthday party/BBQ and they were eaten up within 15 minutes of me setting them down. All my girlfriends at the party were asking me for the recipe because they are so different than your normal chocolate chip cookie. Enjoy!
