If you like pecan sandies, you will love these cookies. They are easy to make, and you will most likely have all of the ingredients needed on hand. You can make a double batch of these if you like them a lot, and this will result in a large amount of cookies. These are great to bring to potluck dinners or to a friend’s house for a gathering.

The ingredients for these are:

  • ¼ c. powdered sugar
  • 2 c. flour
  • 1 c. pecans, finely chopped
  • 1 c. butter, softened
  • ½ tsp. baking soda
  • 2 tsp. vanilla
  • 1 T. water
  • Additional powdered sugar for coating

For this recipe, you will need to preheat your oven to 300 degrees. Take out a large mixing bowl and place the butter and powdered sugar in it. Mix these ingredients together well with an electric mixer, until they are light and fluffy. Next, add the vanilla and water and mix well.

In a separate bowl, combine the flour and baking soda together. Add this to the first mixture and mix well. Finally, add the chopped pecans.

Take the dough and form one-inch balls with it. Place the balls on ungreased cookie sheets and then flatten each one slightly with your hand. You can also place the dough in the refrigerator for an hour or so before you do this because it will help make it easier to work with.

Bake the cookies for around 20 minutes and let them cool for 5 minutes before removing to a wire rack. When they are completely cool, place two or three in a bag filled with additional powdered sugar. Shake the bag gently to coat he cookies and then store them in an airtight container.
